Super Easy Rice ‘n’ Beans

I know there will be many times that I regret “inventing” this recipe, but for the last few weeks it has been a lifesaver. We don’t have time to cook, but we don’t want to waste money or ruin our health by eating fast food. This simple recipe makes filling food with very little salt or fat.

Super Easy Rice ‘n’ Beans

1 batch rice (made from 1 cup dry), no oil or salt added
1 14-16 oz. can of black, pinto, or kidney beans, rinsed and drained
Goya Adobo seasoning to taste
Olive oil to taste

Cook the rice according to package instructions. When it’s done, add the beans so that they are warmed by the heat of the rice (note: we use beans that have no salt added, but rinsing should remove much of the salt from a regular can of beans). After a few minutes, add the Goya Adobo seasoning and the olive oil, but don’t overdo it—a little goes a long way. Stir and serve.

    Ummmm, “Super Easy Rice ‘n’ Beans” is best served with a healthy dose of olive oil and a thorough coating Adobe seasoning. And I don’t ever remembering you “serving” me a dish of “Super Easy Rice ‘n’ Beans”. I think you got the stir instruction correct. Even though some consider this a side dish itself, I like to plate this with a side of beer. I was taught all my food pairing know how by my good friend Ben Franklin.

    P.S. I’m sure this recipe would also work with peas.
